Just a quick note that anyone working with Server Object Extensions, or needing to tweak the settings of your ArcGIS Server, should take a look at the SOE Xplorer. Vish cooked this little tool up to simplify registering Server Object Extensions, but then went hog wild and added in all sorts of other goodness - basically allowing you to edit any server configuration attribute.
I used it to pump up the MaxRecordCount for a service - which defaults to 500 in case you don't know.
